Raw Cacao refers to the raw form of chocolate/cocoa which is not processed in any way or is minimally processed, unsweetened, and is made from unroasted cacao beans. Raw cacao products (from unroasted cacao beans) retains much more of its natural nutrients and antioxidants compared to traditional regular cocoa which has been roasted.
The cacao beans are lightly fermented to bring out the cocoa flavor, increase nutrient availability and reduce phytic acid content.
