Yacon, though deliciously sweet, is a natural dietetic and prebiotic food. It is grown in the Andes for its crisp, sweet-tasting tuberous root. The texture and flavor have been described as a cross between a fresh apple and watermelon. Traditionally, Yacon has been used in South America both as food and to help control blood sugar and improve digestion.
Yacon root is considered the world's richest natural source of fructo-oligosaccharides(FOS), a form of prebiotic fibre which passes through the digestive tract unmetabolized (meaning it is not absorbed by our bodies) but does the work of stimulating the growth of good intestinal micro-flora by feeding the probiotic(good) bacteria in our digestive system while simultaneously reducing the population of harmful bacteria such as Candida albicans. Consequently, Yacon improves colon health, digestion, detoxification and our immune system.
Yacon syrup has a pleasant caramel-like, molasses flavor. It is thick and sticky and it easily substitutes for maple sugar or molasses in recipes and brown sugar in baking. It can also be used to sweeten beverages (but not too much as it is afterall a prebiotic food). Can substitute honey in a 1 to 1 proportion.
Mix 1 full teaspoon (for a start) of Yacon Syrup in a glass of warm/cold water for a pleasant prebiotic drink that improves digestion and bowel movement. Add lemon juice if desired.
